Zucchini Chocolate Cake

Hello friends. You are my friends, and that is why I have decided to share a favorite recipe of mine with you. It is a zucchini chocolate cake... and it is so deliciously moist. It will give you an excuse to use up all that zucchini you have that is taking over your garden, and enjoy it while you're at it! A piece of this cake is like a small piece of heaven.

Zucchini Chocolate Cake

1 cup vegetable oil
2 cups sugar
3 eggs
2 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup milk
3 (1 oz) squares unsweetened baking chocolate
1 tablespoon vanilla
2 cups grated zucchini
1 recipe Chocolate Butter Frosting

In a large bowl combing oil, sugar, and eggs. In a separate bowl sift dry ingredients; add to first mixture. Add milk and mix well. Melt baking chocolate in the microwave for 20-second intervals, until just melted. Blend chocolate and vanilla into batter. Stir in zucchini. Bake in greased 9x13-inch baking dish at 350*F. for about 25 minutes. Cool and frost with Chocolate Butter Frosting. Makes 12 servings.

Chocolate Butter Frosting (to die for and great with any sheet cake!)

1/2 cup butter
1/3 cup milk
2 (1 oz.) squares unsweetened baking chocolate, melted
3 1/2 cups powdered sugar
1 teaspoon vanilla

In a medium saucepan bring butter and milk to a boil. Remove from heat. Add melted chocolate, powdered sugar, and vanilla. Beat until smooth.

Cut into big pieces and pair it with a glass of cold milk, or if you are really daring... homemade vanilla ice cream. YUM.

  2. oh my goodness, you've read my mind. brother jeppson brought us a ginormous zucchini before we left town and i've been wondering how we'd ever use it up. now that you say whip it into a chocolate cake, i am evermore excited to eat my vegetables!
